The cold side of the menu leans bright and coastal: cobia ceviche in suero costeño leche de tigre with fried sweet plantains and crispy quinoa, yellowfin tuna tartare over crunchy tostones, and wood-fired prime flap meat carpaccio finished with white truffle oil, Maldon salt and 24-month Parmigiano Reggiano. Make most of them gluten-free by swapping the Cuban crackers for arepa chips.
