Behind the door on Collins: a rum museum that pours

Three rooms, one long night.

Behind The Stiles Hotel on Collins Avenue sits a bar built like a rum museum: 24 seats at the marble bar, 30 more in the neighboring lounge, and an open-air patio by the pool with room for 30 under the string lights. The decor runs to a mural and walls lined with photographs telling the history of rum — and when the bartenders aren't too busy, they'll give you the tour.

The inspiration is the 18th century, when rum was enormously popular and the glory story of many. The execution is pure South Beach speakeasy: banker's lamps on marble, tufted banquettes, more than 150 rums on the wall, and doors that stay open until 3 AM every night. Dress code: smart casual.
